This summer, TĪNG Restaurant at Shangri-La The Shard invites guests to escape the bustling capital for a taste of the British coast, without ever leaving London. The award-winning restaurant has launched "Seaside in the City," a limited-edition afternoon tea experience that transforms the 35th floor dining room into a coastal haven, complete with sun-drenched flavours and panoramic views across the Thames.
Developed in collaboration with Papa Salt Coastal Gin, this sophisticated afternoon tea captures the essence of seaside elegance whilst maintaining the refined standards that have made TĪNG one of London's premier dining destinations. The experience represents a perfect marriage of coastal inspiration and metropolitan sophistication, offering guests a unique culinary journey that celebrates Britain's maritime heritage.
Executive Pastry Chef Piero Sottile has crafted an exceptional selection of pastries that showcase his technical prowess whilst paying homage to the flavours of the British coastline. The afternoon tea's sweet offerings are nothing short of spectacular, with each creation designed to evoke memories of seaside holidays and coastal adventures.
The "Ocean Jewel" stands as the crown jewel of the collection, featuring delicate vanilla and pecan praline that captures the sophistication of coastal dining. Meanwhile, the "Coral Bloom" presents Valrhona Caramelia paired with apricot and verbena, creating a harmony of flavours reminiscent of sunset walks along the shore. The "Blue Horizon" rounds out the trio with fresh blueberries and zesty lemon, evoking the endless expanse of sea meeting sky.
Perhaps most impressive is the "Shard of the Sea," a sharing dessert that incorporates Japanese Sencha tea with peach and mango, demonstrating the kitchen's ability to blend international influences with coastal themes whilst maintaining the afternoon tea's British roots.
The savoury selection maintains the coastal theme whilst showcasing premium British ingredients. Guests can enjoy finger sandwiches featuring Coronation Chicken with raisins, Madras curry, and caramelised onion, alongside smoked salmon paired with dill crème fraîche and lime zest. The roasted dry-aged beef sandwich, served with horseradish and watercress, demonstrates the kitchen's commitment to quality sourcing and traditional flavour pairings.
Vegetarian guests are equally well catered for with the truffle egg and cress sandwich, made using St Ewe's organic eggs and baby watercress. The savoury selection is further enhanced by a Montgomery Cheddar and spinach muffin, alongside an avocado and prawn cocktail bun that perfectly encapsulates the seaside theme.
No British afternoon tea would be complete without scones, and TĪNG's offering maintains this beloved tradition whilst adding contemporary touches. Freshly baked plain and raisin scones are served warm with strawberry jam and clotted cream, providing the comforting familiarity that afternoon tea enthusiasts expect.
The tea selection itself is comprehensive, ranging from traditional black teas such as Darjeeling and Assam to more exotic options including Jasmine Pearls green tea and China Milky oolong. Each guest begins their experience with the signature Peach & Mint welcome tea, setting the tone for the coastal journey ahead.

For added convenience, guests can enhance their experience with additional flutes of champagne, with options ranging from £15 for the alcohol-free Wild Idol sparkling rosé to £35 for the premium Louis Roederer Brut 2016.
