Hide's tasting menu celebrates the rhythm of the seasons, showcasing ingredients at their absolute peak whilst pushing the boundaries of culinary innovation. The current menu opens with the welcoming ritual of bread and broth, setting the stage for an exploration of both land and sea that follows nature's own calendar.
The journey continues with Isle of Wight tomatoes presented alongside goat's curd, basil, and summer berries—a dish that captures the essence of the season in perfect harmony. Each course builds upon the last, creating a narrative that speaks to both the palate and the imagination. The interplay of celeriac, Jamón, coddled egg, and maitake mushrooms cooked over juniper demonstrates the kitchen's mastery of technique and flavour composition.
The artistry reaches its crescendo with steamed Cornish turbot, where the delicate fish is elevated by cauliflower, girolles, and a sublime vin jaune butter sauce.
